Denver is an outdoor city known for its world-class cultural attractions, thriving craft breweries, chef-driven dining, and a hot music scene, all within reach of the Rocky Mountains. We love visiting during the spring and fall as it isn't quite as busy. On our last trip, while exploring Capitol Hill, we came across this lovely little spot to try out some avocado toast; it's called Corner Beet.

The Corner Beet had been serving up vegetarian-inspired clean eats since 2014. They're known for raising expectations for vegetarian and vegan food options in Denver. We headed in with high expectations, and obviously, we were not disappointed.

This bright and airy space is such a fresh and welcoming environment; it was just what we needed after walking around in the Denver heat. Corner Beet has indoor and outdoor seating options, and we couldn't pass up the sun, so we choose a table on their sidewalk patio.

The Corner Beet had many menu options, things even the kids would enjoy! We decided on a sweet and spicy combo of honey & red pepper flakes, simple but so delicious. It paired so well with the soup of the day and a fresh green salad! It was such a great lunch, quick, easy, and fresh.
